Tuna rillettes with chorizo: a summit meeting!
A breath of fresh air blows over the aperitif. We dare not dare to present fish-based dishes as an aperitif, and yet another land-sea association. This type of recipe is not very conventional, but it is nevertheless exceptional if the ingredients are in the right proportions.
Jean d'Audignac's tuna rillettes with chorizo follow an original recipe that combines the subtle flavour of tuna with the pep of chorizo for an explosive mouthfeel! The touch of cream brings the necessary smoothness to make the rillette greedy and tasty and the touch of lemon perfectly balances the different flavours present in the recipe. The most discerning gourmets will not be mistaken!
We find in the same range the sardine rillettes with dried tomatoes which are a concentrate of Provençal cuisine in an aperitif spread. For the more reserved, Jean d'Audignac offers more classic flavours of rillettes: scallops, crab-cake, smoked trout or the traditional tarama. Finally, the most daring will try the seaweed tartare with lemon and shallot, slightly iodized and so marine.
These are natural rillettes, without colouring, preservatives or chemical additives.
