At the beginning of the 20th century, the sturgeon Acipenser sturio, was widely present in the estuary of the Gironde, Dordogne and Garonne rivers where females went up to spawn.
Legend has it that a Russian Princess passing through the Gironde was horrified to see that fishermen only kept the flesh of the fish while the eggs were roughly thrown into the sea or given to the ducks! She explained that in her country this dish was sold at a high price and that the fishermen were amassing real fortunes. Thus, from 1920 onwards, caviar production began on the right bank of the Gironde, which could reach nearly 5 tons per year!
The protection of the species...
Unfortunately, the sturgeon will then be fished inconsiderately, leading to a progressive disappearance in the waters of Gironde... Finally, its fishing was totally banned in 1982. At the same time, the CEMAGREF of Bordeaux (Centre du Machinisme Agricole, du Génie Rural, des Eaux et des Forêts), launched a programme to repopulate the sturgeon area.
To do this, it is asking for the contribution of experienced fish farmers to try to breed and reproduce in captivity specimens of a sturgeon SibОrien, the Acipenser baerii.
Baeri caviar is representative of sturgeon farming in Aquitaine. An Acipenser Baeri requires 8 years of rearing before giving eggs.
Its grains combine roundness and slight firmness which leads to an explosion in the mouth of harmoniously fruity and iodized flavours.
Mature or refined, it can be enjoyed on its own, served with a spoon, the box previously placed on a bed of ice: a real pleasure.
An irreproachable selection: the eggs are sorted a first time during the harvest. They are then packed in large 1kg boxes and placed in the cellar. They are then sorted again and repacked to order in small sizes.
Characteristics: brown colour - diameter 2.7 mm, rolling and long in the mouth - 4% salt.
